Pasta e patate, as my mother does
Beside a nice, heartwarming recipe and a nice picture, today I also want to share the story that is behind this recipe, that comes from the very hands of that wonderful creature that is my mother.
Milano, a few years ago, with a douchebag ex boyfriend of mine, one of the first meals I ever prepared. I wanted to impress him and I asked for my mother's recipe, which I followed to the letter, and I was very surprised to taste the result: it was just excellent! Just by chance of course: after that, there were a lot of failed intents of cooking something edable. It's funny that I have erased most of the memories that I shared with that person, but I still have the taste of my very first soup saved in some part of my brain. Shitty boyfriends go, good food stays: alleluia!
PASTA E PATATE
(serves 4)
6 medium potatoes
1 onion
2 celery sticks
1 carrot
vegetable stock (or chicken stock, for more intense flavour)
4 tomatoes (whole)
rosemary
pasta cannolicchi
Cut the onion, the celery and the carrot in small pieces and pan-fry with 2 spoons of oil until golden. Add 5 potatoes cut in cubes and 1 whole, the stock and the tomatoes. Add a couple of rosemary boughs. When the whole potato is ready, take it out and smash it with a fork. Also smash the tomatoes, removing the skin. Add the pasta and when cooked, serve with olive oil on top. And before eating, drop your shitty boyfriend, if you have one!
