My first Eatwith experience: Aitor and Marina
Yes, I finally did it. I got two persons to watch my eatwith offer and pay actual money to eat at my table. Eating my food. And paying.
I won't lie to you, the second I read the request I totally panicked, like I really REALLY panicked. Like I was this close to hit the button "decline the offer". But I didn't. I panicked for another 24 hours, called my mother a few times, and then started thinking about what to make for dinner. Because Aitor is vegetarian, and my ravioli menu needed a rethink :)
I have to be honest with you, there is room for improvement; not just in the quality of the food (which was mostly ok after all), but in the way my brain, made up of 80% water and 20% anxiety, handles the event organisation :)
Well well well, all this anxiety suddenly disappeared when I found out that Aitor and Marina - tadaaaaaan! - were two friendly face I already knew, and wanted to support my cause :) I felt so much loved and appreciated, and this really gave me a push to continue along this track. Plus we had a great evening!

PINK RAVIOLI WITH SPINACH AND RICOTTA CHEESE
1 beetroot, boiled and blended
3 eggs
300 gr flour
200 gr ricotta cheese
500 gr spinach
nutmeg
butter
sage leaves
Make the pasta with the beetroot, 2 eggs and the flour, leave it rest in the fridge. Boil and drain well the spinach, then mix with the egg and the ricotta, adding nutmeg to taste. Make the ravioli and serve with sage and melted butter. Enjoy!
