I wanted to do it since quite a few years... since I was approaching my 30ies I would say (in line with all the statistics). I had a couple of failed attempts, but I decided not to give up: I was feeling that this was exactly the right time and the right place to give birth to a living been.
And so I started: flour and water each day for two weeks. Keep it warm, clean the jar, do not use soap to avoid disturbing the small bacterias that were already working for me and finally the joy of seeing it growing a little every day! My sourdough (or mother dough, as it is more poetically called in italy)
All this effort was to have lighter bread and pizza. For the occasion I also bought 15 kilos of organic flour, delivered to my flatmate's office.... maybe this time it was kind of too much, but when the aim is so important...
My first homemade bread is brown bread with mixed seeds. I have to admit it was missing a little bit of salt, but as a first attempt I am totally delighted and amazed by my perseverance :)
BROWN BREAD WITH MIXED SEEDS
250 gr white flour
250 gr brown flour
180 gr of my lovely sourdough <3
350 gr water
1 teaspoon honey
Melt the sourdough in the water with the honey and add the mix to the flours. Make a solid dough and only at the end add the seeds and the salt. Let it rest for a couple of hours. Make the shape of the bread and place it in the bread tray; make a cross cut on top and sprinkle with mixed seeds. Let it rest 3 hours more, then bake at 240 degrees for 30 minutes and 200 degrees for 30 minutes more. Let it cool down in the oven. Enjoy with fresh oramge juice and your mother-in-law's homemade peach jam.
